Juicer Pulp Muffins - Gluten Free, Sugar Free, Dairy Free, Soy Free

After struggling with cystic acne for almost 4 years, I started Veíse. I was determined to clear up my cystic acne through natural topical solutions, and once I had formulated a skincare line that actually helped this, I also knew that diet was a huge factor into keeping cystic acne, acne, and inflammation from wreaking havoc on my confidence.

I was diagnosed with an auto-immune disorder 4 years ago that attacks the moisture glands in my body. Once the flare ups started, thats when my acne also started. After years of researching auto-immune diseases, inflammation, acne, natural healing, herbs, diet, reading medical journals, and using my skin and body as real live experiments, there's a few key things I've learned and a lot it has to do with the products we put on our skin - up to 64% of what you put on your skin gets absorbed into the body; this is the reason we focus on nutrient dense ingredients, essentially infusing vitamins into the body from the outside. The food and drink we consume also contributes to how our body and skin react.

Breaking down all the knowledge I've learned about how foods affect the skin is a bit long for this blog post, so I'm going to touch on a few key foods that may be making you break out, then I'll go in depth on another blog post about the experiments I've conducted over the past few years, and how they contribute to breakouts and inflammation; this way you have a basis as to why there's so many "free this, free that" in the blog title. 

Key culprits for acne 

Now, these aren't true for everyone, or that would mean everyone who ate these things would break out. This list has been compiled from not only my personal experience, but others who struggle with cystic acne as well. 

- Dairy 
- Refined Sugar 
- Soy 
- Alcohol
- Processed Foods
- Foods that lack nutrition/ vitamins
-Gluten

Although these haven't been easy to remove from my food regimen - I hate the phrase diet because it has a negative connotation in my head; A diet is something that's short term typically. A food regimen is changing your eating habits to create a positive impact on your life, body, and well-being. 

Anyways, after experimenting for almost two years, my skin and body are SO MUCH happier when I don't incorporate these foods into my daily life. I'll definitely be releasing a blog post as to why this occurs, and make sure to link over to it in this post.

Everyone's body is different, and although cutting these food groups out of my food regimen has had a very positive impact on my cystic acne and inflammation, I can't guarantee it'll work for everyone. 

Down to the good stuff. 

These magical muffins. 

I decided to buy a juicer after I was tired of spending so much money at my local grocery store to get my fix. 

Drinking fresh juice on an empty stomach infuses your body with a massive dose of vitamins, nutrients, and anti-inflammatory properties. Anything that makes me physically feel better, contributes to feeling mentally better. It's really a balancing act that gets easier over time once you change your habits.

The first day, I got everything set up, and juiced two full bottles worth.

I was proud since I'd never really done it before and was so excited to start my new morning juice regimen. The only thing I couldn't figure out, was what do I do with all the pulp?!

I had added kale, carrots, apples, clementines, grapes, and lemon. Essentially grabbing whatever was handy in my fridge or things that were about to go bad. 

I HATE wasting anything, so I was trying to figure out how to use all the leftover fruit and veggie pulp without having to throw it away. It seemed like a huge waste of not only food, but money also.

I had seen a few people on IG make veggie pulp bread, and figured this would be the perfect opportunity to not only try something new, but create a delicious nutrient dense muffin I could enjoy in the morning with my collagen protein shakes. I literally take our Veise Collagen every. single. day. and my skin/ hair thanks me for it every. single. day.  

These muffins are high in fiber, packed full of antioxidants and essential vitamins, as well EXTREMELY delicious. 

I had every intention of making these last for 12 breakfasts, and needless to say I'm on day 4 and only have 2 muffins left. I eat them as quick snacks throughout the day to give me a pick-me-up!

Let's break it down.

Juicer Pulp Muffins - Easy Breakfast Muffin - Gluten Free, Soy Free, Dairy Free

Juicer Pulp Muffins 

Cook Time: 35-45 mins

Servings: 12

Ingredients

3/4 tsp Monk Fruit (carries anti-aging properties & replaces sugar)

1/4 cup smashed banana

1/4 cup vanilla almond or cashew milk 

2 tbsp olive oil 

2 tbsp honey 

1 tsp vanilla extract 

1 tsp cinnamon 

1 1/3 cup gluten free flour 

3/4 tsp baking powder

1/2 tsp baking soda

1/8 tsp salt 

1 1/2 cups fruit and/ or veggie pulp 

2 tbsp chia seeds 

You can also add 2-3 tbsp of Veise Collagen Peptides to the recipe, just make sure you add another 1/8-1/4 cup almond/ cashew milk. 

Directions

1. Preheat oven to 350 degrees. Grease 12 count muffin pan with olive oil. 

2. In small bowl, whisk together the monk fruit, almond/ cashew milk, smashed banana, olive oil, honey (do the honey after the olive oil in the same spoon because it will slide off the spoon easier), cinnamon, and vanilla. 

3. In large bowl, mix gluten free flour, baking powder, baking soda, salt, chia seeds and Collagen (if you're adding collagen)

4. Add wet mixture to flour mixture, then add fruit/ veggie pulp.

5. Mix well, making sure not to over mix. Spoon mixture into muffins pans and bake for 35-45 mins or until tops are browned.

6. Let cool for 10 minutes before serving.

I let mine cool for about 30 minutes before placing them in a glass container and refrigerating them.
